Quick & Delicious Recipes to introduce to your family during Quarantine

Hey Y'all,

I wanted to put a little something together for everyone who reads this and finds themselves stuck in the similar rut called quarantine.

I know how hard it is right now. Many of us eat out with semi-regularity throughout a normal week. With working long hours and not wanting to come home and cook a big dinner for the family, its truly the easiest way.

But, if you're anything like us, many of your favorite places are either closed or are operating through some kind of curbside pick-up style means. not to mention the fact that many people have lost their jobs making simple things such as dinners and family outings especially difficult (financially).

So, what I've decided to do is provide some delicious recipes that won't take an executive kitchen or extensive ingredients list to make!

Note: Some of these may be breakfast, lunch or even dinner related, in no particular order. With that said, please enjoy the upcoming list and try some for you and your family!


Pork Chops with Dijon Cream Sauce

Pork Chops with Dijon Cream Sauce is a dreamy, delicious way to take plain old pork chops to a whole new level. These thick, juicy pork chops smothered in a garlicky dijon sauce will make you think twice about ever serving a plain old pork chop again!

 Servings 4 servings


4 boneless pork chops see note
salt and pepper, to taste
2 tablespoons butter
2 teaspoons oil

Dijon cream sauce

1 tablespoon butter
2 teaspoons minced garlic
1 cup chicken broth I used low sodium
2 tablespoons dijon mustard
1 cup heavy cream
1/2 teaspoon salt, or to taste
1/4 teaspoon cracked black pepper, or to taste


Preheat oven to 425 degrees.
Generously season pork chops with salt and pepper on both sides.
In a large skillet over medium heat, melt butter. Drizzle oil into the pan.
Add pork chops to the pan and sear on both sides for 2-3 minutes. Transfer to a plate and cover to keep warm.
To prepare the sauce, add butter to the pan. Once melted, stir in garlic for 1-2 minutes until fragrant.
Add chicken broth. Whisk in dijon mustard, then cream. Stir in salt and pepper.
Return pork chops to the pan, spoon some of the sauce over the pork chops, then transfer to the oven.
Cook for 10 minutes. Spoon liquid from the pan over the pork chops. Cook another 10-15 minutes until pork is cooked through and sauce is thickened.
Spoon more sauce over the pork chops, garnish with black pepper and fresh herbs if desired and serve.


Grilled Hawaiian Chicken Teriyaki Bowls

6 сhісkеn tеndеrѕ (оr 3 сhісkеn brеаѕtѕ) 
2 zuссhіnіѕ , ѕlісеd 
2 bеll рерреrѕ , аnу соlоr, chopped 
1/2 ріnеаррlе , peeled аnd сut into spears 
1 red оnіоn , sliced thin 

Fоr Thе Cосоnut Rісе: 

2 cups wаtеr 
1 1/2 сuрѕ саnnеd unѕwееtеnеd coconut mіlk (аbоut оnе 13.5 оz саn) 
2 tеаѕрооnѕ lіght brоwn sugar , packed 
1 tеаѕрооn ѕаlt 
2 сuрѕ lоng grаіn white rісе , оr jasmine rice 

Fоr Thе Tеrіуаkі Sauce: 

½ cup low-sodium ѕоу ѕаuсе 
2 Tablespoons rісе vіnеgаr 
1 Tаblеѕрооn sesame оіl 
1/4 сuр + 1 Tаblеѕрооn lіght brown sugar 
1 Tаblеѕрооn hоnеу 
¾ tеаѕрооn ground ginger 
1 сlоvе gаrlіс , mіnсеd 
2 tеаѕрооnѕ cornstarch+ 2 tѕр wаtеr , mіxеd tоgеthеr to mаkе a cornstarch ѕlurrу 
1/4 tеаѕрооn сruѕhеd rеd рерреr flаkеѕ 


For Thе Coconut Rісе: 

Add the water, сосоnut milk, ѕugаr, аnd salt tо a lаrgе ѕаuсераn. 
Brіng tо a bоіl, then stir іn rісе. Rеturn tо a bоіl. 
Reduce hеаt tо lоw, соvеr and сооk fоr 20 mіnutеѕ. 
Rеmоvе from hеаt аnd lеt stand, covered, 10 mіnutеѕ, bеfоrе fluffіng wіth a fоrk. 

Fоr Thе Teriyaki Sauce: 

Mаkе thе tеrіуаkі sauce bу аddіng аll оf thе sauce іngrеdіеntѕ tо a ѕmаll saucepan over mеdіum hеаt. 
Brіng tо a bоіl, ѕtіrrіng соnѕtаntlу, аnd bоіl fоr аbоut 1 mіnutе. Thе ѕаuсе ѕhоuld bе thісk enough tо соаt thе back оf thе spoon. 


Veggie and Shrimp Stir Fry

Sweet, tangy, with a definite Asian flair this shrimp stir fry dish is perfect served over a big bowl of white or brown rice. While you can buy your vegetables fresh and dice I find that it is better to buy them frozen and ready to go in the bag. Not only is it cost-effective (-compare buying 5 or 6 different veggies, as well as water chestnuts to a big bag for $1.99), but they are generally frozen at the peak of ripeness so they contain more nutrients, and it just saves so much preparation time this way. Swap out small bite-sized pieces of chicken or beef if you are not a seafood fan- prep and cook the same way.

Ingredients for Shrimp & Veggie Stir Fry at Home
1 lb. peeled and deveined shrimp
1 large bag frozen stir fry vegetables
2 cloves garlic, crushed
1 tsp. fresh ginger
1 tsp.. brown sugar
1 tsp. cornstarch
¼ cup of soy sauce
¼ tsp. red pepper flakes
Optional: Add Stir Fry Meat instead of stir fry shrimp (You can use any of the following cuts: Sirloin, Skirt Steak or Flank Steak; cut into cubes and add to bag)
Directions to Cook Shrimp & Veggie Stir Fry
Place all ingredients including the soy sauce in a 1 gallon freezer bag, massage bag to distribute well, shrimp will marinate in the freezer.
I like my veggies crunchy, if you prefer yours softer, leave them in the original bag from the store, rubber band them to the bag of shrimp and seasoning.
For softer vegetables- Add 2 tsp. oil to a large nonstick skillet (or wok), saute vegetables for 5-7 minutes, then add shrimp and cook for an additional 3-4 minutes over medium heat.
For crisper veggies- Add everything at once cook for 5-7 minutes total- longer will leave your shrimp too tough.
Serve the veggie Shrimp stir fry over rice or noodles for a complete meal.

Philly Cheese Steak Sloppy Joes

1 lb ground beef
1 yellow onion, finely chopped
1 green pepper, finely chopped
1 tablespoon cornstarch
1 cup beef broth
1/4 cup A-1 steak sauce
1-2 teaspoons steak seasoning
salt & pepper, to taste
sliced provolone cheese
hamburger buns
In a skillet pan, over medium high heat, cook ground beef, onion, and green pepper until beef is cooked and no longer pink. Drain.
Add cornstarch into the beef mixture and stir together until dissolved and beef is coated in the cornstarch.
Add beef broth, steak sauce, steak seasoning. Bring to a low boil and then turn down heat to medium-low and let simmer for 10 minutes, stirring occasionally, until most of the liquid is absorbed. It will thicken a little bit more once taken off the heat.
While beef is cooking toast your buns and cheese. Separate hamburger buns and place tops and bottom onto the cookie sheet. Place a slice of cheese on the bottom bun, and then broil on high for 2-3 minutes.
Using a slotted spoon, place some meat onto a bun and put top bun on.


Without intentionally overwhelming any of you, there is a handful of recipes to "spice up" your dinner or lunchtime during this covid craziness.
